Well they dont, and they just leave a rough edge on the blade. This does actually cut things, it saws them, but it wont hold this kind of sharpness beyond a couple of loaves and a few tomatoes. So much so that I bought three!
I have tested one on a wide range of bladed implements (the biggest a garden hoe) and it has been able to put a sharp edge on them all. The hoe did split the plastic housing (that's what I get for being silly) however I still use it for kitchen knives and pen knives and it works a treat. It won't do scissors.
